Matar is green peas. As peas has slight sweet taste, it is used to make sweet as well as in gravy and with other vegetables.
Ingredients
green peas boiled and ground 1 bowl
milk 1 bowl
sugar 1/2 cup or to taste
cardamom pdr 1/2 tsp and for garnish
nuts and raisins as desired.
ghee 2-3 tbsp
Preparations
heat ghee in a heavy pan, once hot add ground peas, keep stirring well
add ground peas, keep frying for 3-4 minutes
add milk, keep stirring and cook till milk is absorbed
as milk is being absorbed add sugar so both can cook together
once thick, add cardamom pdr, nuts, raisins
remove as it leaves the sides of the pan, adding little ghee to give the shine
garnish with cardamom pdr,nuts and raisins and serve hot .
don't overcook as green colour will become dark.
