Ingredients
Basmati rice– 1 cup
water – 5 cups
salt 4 tsp / to taste
pineapple cubes– 1 cup
green chilies 1 tsp finely chopped or to taste
red chilies 1 tsp
spring onions 4
garlic 1 clove
celery 1 sprig
black pepper 1/2 tsp / to taste
soya 1 tbsp
red chili sauce 1/2 tbsp
cashews – 1/4 cup
Sesame oil 3 tbsp
coriander leaves finely chopped 3 tbsp
Preparations
Wash and rinse the rice well until the water is clear. Drain all the water and soak the rice in 1 cup of water for 20 minutes. Drain and keep aside.
In a pot, bring 4 cups of water to boil, add salt and oil. Add rice to the water and cook the rice without a lid on medium flame.
When the rice is almost-cooked, remove it from the pot and drain the extra water.
Fluff the rice with a fork and set aside.
Chop the pineapple into small cubes. Chop the onion, green chilies, red chilies and onion and peel the garlic and chop finely.
Heat oil in a wok and add the chopped onions and saute on medium heat for a minute.
Add chopped green and red chilies, garlic and finely chopped celery.
Add the cashews and saute for about 3 to 4 minutes until they turn golden.
Stir and sauté the pineapple cubes for 4 to 5 minutes until the moisture dries up and the pineapple is caramelised.
Add freshly ground black pepper and stir. Add soya sauce and red chili sauce and mix evenly. Add the cooked rice and season with salt.
Add coriander leaves, chopped spring onions, stir and mix well.
