Ingredients
Zucchini shredded and drained well 1 cup
Garlic clove1 finely grated/ chopped
Egg 1 large * veg substitute
Breadcrumbs 1/3 cup
Parmesan cheese grated ¼ cup
Spring onion chopped 2 tbsp
Fresh parsley/ coriander leaves 1 tbsp
Fresh basil chopped 1 tsp OR dried oregano ½ tsp
Salt and pepper to taste
Preparations
Preheat oven to 400 deg. F / 200 C
Place the shredded zucchini in a cheesecloth or paper towel and press firmly to drain out all excess moisture.
In a medium bowl, combine the drained zucchini, grated garlic, egg, breadcrumbs, Parmesan, spring onion, parsley, basil, salt & pepper. Mix well until fully incorporated.
Using your hands, form the mixture into 1 tbsp size balls and place on a baking sheet lined with parchment paper.
Bake for 15-18 minutes, until the bites are lightly browned.
Serve the zucchini garlic bites warm out of the oven as appetizers or with warm marinara sauce for dipping. Store any leftover in an airtight container in the fridge for 2-3 days.
*To substitute one egg in baking, you'll need 1 tablespoon of ground flaxseed meal mixed with 2.5 to 3 tablespoons of water. Allow the mixture to sit for about 5 minutes until it thickens, creating a gelatinous consistency, which is similar to an egg white.
Tips- make sure you drain that zucchini really well. You don’t want any excess water making your bites soggy. Squeeze it out using a cheesecloth or paper towel as dry as possible.
Don’t be afraid to use different herbs.
You may add chili flakes or green chilies finely chopped as per taste. To make it spicy.
You may add mozzarella/ cheddar to the mixture, to make the bites more irresistible.
If you’re planning ahead, you can prepare the mixture up to a day in advance and keep it in the fridge. Shape the bites and bake before serving.
You may use any sauce or dipping of your choice.
If you’re baking for a large crowd, you can double or even triple the recipe as needed.
