This is a slight variation from the normal suji cake that I bake. I added strawberry crush, reduced the amount of sugar I added normally. I forgot to add some ghee while mixing the batter, but still came out well, soft.
Ingredients
suji 1 cup
milk 1 cup
curd 3/4 cup
sugar 1/2 cup
strawberry crush 4 tbsp
raisins and nuts
baking pdr 1/2 tsp ( as I took a small cup for measurement)
salt little
Preparations
Mix all the ingredients except baking pdr, let the batter rest for 30-40 minutes. Check the consistency of the batter, it should be slightly thinner than the cake batter. Add baking pdr, salt, mixed well.
Greased a microwave safe plate, micro for 6 minutes, let it rest in the microwave for another minute, then cut it.
You can bake in the oven @ 180 C for roughly 15-20 minutes, depends on the size, amount of cake and voltage.
I made it quickly for my very cute, young,smiling and confident, retina specialist, whom I'll be meeting in the afternoon for my retina check-up.
