INGREDIENTS
Crust:
brown sugar 1 cup
flour 1/3 cup
chopped walnuts, almonds 1/2 cup
butter, melted 1/3 cup
Sweet Potato Mixture:
sweet potatoes cooked and mashed 3 cups
sugar 1 cup
salt 1/2 tsp
vanilla essence 1 tsp
eggs 2 well beaten
butter melted 1/2 cup
milk little if needed
METHOD
Preheat oven to 200 deg. C. Grease a medium-size casserole dish .
For the crust: Combine brown sugar, flour, nuts and butter in mixing bowl. Set aside.
Combine sweet potatoes, sugar, salt, vanilla, eggs and butter in a large mixing bowl in the order listed. Beat thoroughly with a hand mixer for about 3-4 minutes to increase the fluffiness of the sweet potato mixture. Add little milk if needed and mix.
Pour mixture into the baking dish. Bake for 25 minutes.
Sprinkle the surface evenly with the crust mixture and return to oven for 10 minutes. Allow to set at least 30 minutes before serving.
The brown sugar and nuts crust should be slightly browned and crunchy.
ps- to cook sweet potatoes, wash them well, either you can pressure cook them for 3 whistles or make some holes in them, microwave high for 8-10 minutes, but when you cook potatoes or sweet potatoes in microwave, keep a microwave safe glass of water or else the potatoes get too dry.
