SHALLOW FRIED GREEN LEAFY BALLS

INGREDIENTS FOR THE LEAFY BALLS

spinach, washed & chopped fine    1 cup
methi leaves washed & chopped fine  1/4 cup
besan   1 cup
wheat flour   1/4 cup
salt to taste
green chillies finely chopped 1 tbsp or to taste
ginger finely grated  1 tsp
spring onion 2 tbsp
garam masala  1/2 tsp
turmeric pdr.  1 tsp
asafoetida pdr.  1 tsp
just enough water to make a stiff dough

FOR SEASONING
oil  2 tbsp
mustard seeds  1 tsp

FOR GARNISHING
finely chopped coriander leaves 2 tbsp
grated coconut 1 tbsp
roasted sesame seeds  2 tsp

METHOD

once you've mixed all the ing. of the balls, steam it by keeping them on a greased plate for 10 minutes.
then heat oil in a heavy pan, add mustard seeds, after they crackle, add the steamed balls, shallow fry on low flame till brown on all sides, so, you've to keep turning them around carefully often.
to serve, garnish with coriander leaves, coconut, sesame seeds.
