INGREDIENTS
FOR MAWA COVERING
mawa/khoya 11/2 cups grated
paneer 2 tbsp
maida/all purpose flour 2 tbsp
milk 2-3 tsp
mix all well to form a dough.
FOR COTTAGE CHEESE FILLING
cottage cheese grated/crumbled 1 cup
saffron soaked in milk 2 tsp
cardamom pdr. 1 tsp
powder sugar 1 tbsp
mix all well, make small balls & keep .
FOR SUGAR SYRUP
sugar 1 cup
water 2 cups
boil sugar & water, add little milk to remove the dirt that will float on top.
then boil for 1 string consistency, keep it warm.
ghee for frying
METHOD
take a bigger ball of mawa dough, flatten it in your palm, keep the filling, carefully cover it from all sides, roll, then slightly flatten it. make all similarly.
heat ghee, it should be hot but not smoking, fry the flattened balls on low flame, by putting ghee over it, slightly turning the pot, so it doesn't stick to the bottom, then once it is slightly cooked on one side, carefully turn it over, cook till both sides are golden, at once immerse it in warm syrup, let them soak for at least 30 minutes. then serve warm/ cold, if you wish,decorate with some finely chopped nuts.
