INGREDIENTS
all purpose flour/ maida 200 gm
potato 2 big, boiled, peeled & mashed well
Mozzarella cheese grated 100 gm
salt 1/2 tsp
baking pdr. 1/2 tsp
mustard crushed 1 tsp, divided
milk little if needed
METHOD
in a bowl, mix, flour, salt, baking pdr., mustard 1/2 tsp well, add mashed potato, cheese, mix well.
if needed to bind to a slightly sticky dough, sprinkle little milk.
at last oily hand, lightly knead the dough, then on a greased surface, lightly pat it into round shape, it should be about 1/2 "thick.
then place the flattened dough on a greased baking tray, grate some Mozzarella cheese on it, sprinkle remaining mustard, with a greased knife, lightly cut in the centre, but not till down, then crosswise also,
then bake in preheated oven at 200 deg. C for 20-25 minutes or till cheese melts & it is light brown.
ps- for variation, instead of potato, you may add spring onion finely chopped with green chillies & carom seeds or with mushrooms, lightly tossed with some capsicum & spices of your choice, rest of the procedure will be the same. So, be creative, as you're the master of your taste & creation !
