RAW MANGO WITH MOONG DAL AND SPICES ( MANGAI KOSAMBARI)

INGREDIENTS

yellow moong dal   200 gm
green chillies finely chopped  3-5 or as per taste
ginger grated  2 tbsp/ 10 gm
coriander leaves finely chopped    20 gm
fresh lime juice    25 ml
diced green mango    50 gm
small carrot peeled & grated  1
oil   1 tbsp
mustard seeds   1/2 tsp
salt to taste

METHOD

wash & soak the dal for an hour or until soft., then drain it
heat oil in a pan, add mustard seeds, them add ginger, green chillies, saute well.
add this to the drained dal
add chopped coriander leaves, diced mangoes, carrot, lime juice, & salt to taste.
this can be filled in iceberg lettuce leaves cut like cups, you may mix some ginger-tamarind chutney, my previous recipe, with some thick curd, spread on top of the dal, mango mixture.

Iceberg lettuce are a good source of fibre, potassium, calcium, Vitamin A & C, iron.
