INGREDIENTS
For Capsicum & Tomato Stuffing
capsicum 1 big ( cut top, scoop out well)
tomato 1 big ( cut top, scoop out the seeds)
potatoes 2 boiled, mashed
cashew nuts 1/2 tbsp
raisins 1/2 tbsp
carrots grated 2 tbsp
ghee 1 tbsp
ginger-garlic paste 1 tsp
green chilli paste 1 tsp
salt to taste
cumin 1 tsp
Heat ghee, add cumin, add the pastes, saute well, add carrots, saute, add potatoes, nuts & raisins, salt, mix well. remove, cool.
stuff the tomato & capsicum well.
Heat oil, fry the capsicum & tomato for 2 minutes, drain & keep aside.
FOR CHERRY SAUCE
cherry puree 1 cup
salt to taste
chilli pdr. 1/2 tsp or to taste
cornflour 1/2 tsp
in a pan, add puree & rest of the ingredients, mix well, let it boil to thicken.
keep aside
FOR VEGETABLES
baby potatoes 3-4 80% cooked
cherry tomatoes 3-4
pineapple slices 2
cottage cheese 1" thick slices 2
lime slices 2
salt to taste
pepper pdr. to taste
onion seeds 1/4 tsp
lime juice 1 tsp
butter 1 tbsp
in a bowl, add tomatoes, put a slight cross on the potatoes, add pineapple, salt, lime juice, butter, pepper pdr. mix well.
sprinkle salt, onion seeds & pepper pdr. over cheese slices.
in a foil, roll all these together with 2 lime slice, keep in pre-heated oven for 5-10 minutes.
then keep it aside.
FOR SABUDANA ROLLS
sabudana big ones, soaked, drained 1 cup
potatoes boiled, mashed 1/2 cup
salt to taste
green chillies finely chopped 1/2 tsp
ginger grated 1/2 tsp
peanuts roasted & crushed 4 tbsp
coriander leaves chopped 2 tbsp.
mix all well, make long rolls, deep fry in hot oil till golden brown on all sides.
TO ARRANGE
In a platter plate, drizzle cherry sauce making a design, in one corner, arrange sabudana rolls, then arrange the tomatoes, potatoes, pineapple, paneer slices, keep the stuffed capsicum & tomato, if you like drizzle some more cherry sauce on top, decorate with little coriander leaves, pomegranate seeds around the plate.
This makes a complete meal, as it has carbs, proteins & vitamins.
