PINEAPPLE SALSA

INGREDIENTS

onion  2 tbsp chopped
capsicum  2 tbsp chopped
pineapple sliced   3 tbsp
pineapple juice  1/2 cup
tomatoes finely chopped
garlic 1 tsp finely chopped ( those who don't like garlic, may use ginger)
tomato ketchup  2 tbsp
salt to taste
chilli paste  1 tsp or to taste
pepper pdr.  1/2 tsp or to taste
chilli flakes 1/2- 1 tsp or to taste
oil  1 tbsp
mixed herbs  1 tsp
cream  2 tbsp

METHOD

in a heavy pan, heat oil, add garlic, saute for a minute.
add capsicum, saute for 1 minute, add onion, saute till onion is transparent
add pineapple pieces, saute, add spices, add pineapple juice
mix well, add tomatoes, cook for 2-3 minutes
add ketchup, mix well, add herbs, cook till thick.
switch off the gas, add cream, mix well.
this is basically served cold, with tortillas, you can serve with bread/ roti too or with bread sticks.
