INGREDIENTS
basmati rice 1 cup
freshly grated coconut 1 cup
jaggery/ gur 1 cup
coconut milk (optional) 1/4 cup
ghee 3 tbsp
Saffron few strands soaked in warm milk
cardamom pdr. 1 tsp
cloves 5
cinnamon 1 "
almonds, cashew nuts, raisins 2-3 tbs
METHOD
Wash, soak rice for 30 minutes, then drain. add 1 tsp of ghee while cooking. Keep aside. You may pressure cook the rice by just adding 2 cups of water, so the grains are all separate, or you cook in a pan.
In another pan, heat three tsp of ghee, add cloves, cinnamon and grated coconut and jaggery. Mix and cook till the jaggery melts. Add the cooked rice and stir gently.
Add coconut milk, saffron and cardamom powder. Cover and steam for two minutes. fry nuts & raisins in 2 tsp of ghee, add half of it to the cooked rice, mix well.
Add rest of the nuts & raisins before serving for garnishing.
This sweet coconut rice tastes good even when served cold.
