INGREDIENTS
corn mashed 1/2 cup
corn kernels cooked 2 tbsp keep aside for garnishing
tomatoes finely chopped 1 cup
red chilli pdr 1 tsp/ to taste
chilli flakes 1/2 tsp or to taste
salt to taste
garam masala pdr. 1/2 tsp
cheese grated 1/4 cup
ginger-garlic paste 1 tsp
turmeric pdr. 1/4 tsp
coriander leaves finely chopped 2 tbsp
capsicum finely chopped 2 tbsp
oil 2 tsp
sugar 1/2 tsp
METHOD
in a pan, heat oil, add capsicum, saute for a minute, add ginger-garlic paste, saute again
add tomatoes, sugar, cook till tomatoes are well cooked
add the masalas, corn, salt, mix well, let it simmer for 3-4 minutes, add 1/2 of the coriander leaves
once thick, add 3/4 of the grated cheese, mix well.
serve hot with bread/ roti/ rice, garnishing with remaining cheese, corn kernels & coriander leaves.
ps- instead of corn or along with it, you may add few finely chopped blanched leaves to make it healthier.
or add some mushrooms, those who are fond of mushrooms like me, as they're a good source of proteins & many vitamins, see in my other health blog. ot you may add some carrots, potatoes, beans also.
