Semolina Instant Handvo

 Ingredients

1 cup semolina/ suji

1/2 cup  curd

1/4 cup beetroot grated ( optional)

1/4 cup carrot grated

1/4 cup  bottle gourd/ lauki grated

2 tsp ginger-garlic paste

finely chopped green chilies as per your taste

2 tbsp finely coriander leaves

1 tsp sugar

salt  to taste

3/4 cup water

1 tsp Eno fruit salt

Oil 6 tsp

1 tsp  mustard seeds

1 1/2 tsp sesame seeds

curry leaves chopped 1-2 tsp

Preparations

To make  combine rava, dahi and ½ cup of water. Mix well and keep aside for 5 minutes.

Add the mixed vegetable, beetroot, carrot, bottle gourd, ginger garlic paste, green chilies, coriander, sugar, salt to taste and mix well.

Now add Eno fruit salt, ¼ cup water and mix gently.

Heat 2 tsp oil in a kadhai, add mustard seeds, sesame seeds and few curry leaves chopped

Once  mustard seeds crackled, add the handva batter and cover with a lid and cook on a medium flame for 3 to 4 minutes.

Flip and cook on both the sides until golden brown and crisp.

Serve instant suji handvo hot with green chutney.
