Jackfruit Pancakes

 

Ingredients:

Idli rice

1 cup jackfruit, peeled and de-seeded

Raisins

Almonds chopped

Cashews chopped

½ tsp  baking soda

ghee to cook

½ tsp Cardamom powder

Method:

 Soak the idli rice overnight.

De-seed the jackfruit pieces and chop them into pieces.

Blend the soaked rice and jackfruit pieces until a smooth batter-like consistency is achieved by adding a few teaspoons of water. Add the chopped dry fruits, cardamom powder and baking soda and mix well.

Heat a non-stick pan and add ghee to it.  Reduce the flame to medium and add 2 tablespoons of batter. Rotate the pan so the mixture spreads evenly. Flip the pancake after 2 to 3 minutes and cover with a lid so it cooks evenly on the other side.

Serve hot with honey and some chopped fruits, berries.
