Veg Delight

Ingredients

oil  1 tbsp
onion 1 sliced
garlic chopped finely  1 tsp
ginger grated fine  1 tsp
green chillies  2 finely chopped
turmeric pdr.  1/2 tsp
tomatoes 3 chopped
frozen peas   150 gm
potatoes cut into small pieces  350 gm
baby spinach leaves   100 gm
coriander leaves  chopped  4 tbsp
garam masala pdr.   1 tsp
salt to taste

Method
heat oil in a wide, non-stick pan
add onion, cook over medium heat adding wee bit of salt till soft
add garlic, ginger and chillies, cook for a minute
add turmeric salt, tomatoes, cook till tomatoes are softened
stir in peas, potatoes, coriander, spinach, garam masala with a little water
stir well, cover with a lid, cook over low flame till the potatoes are cooked
serve hot with roti/ bread/ rice
