- 6 medium-sized red potatoes 2 pounds/ 800 gm, washed and cut into chunks
- 8 garlic cloves, peeled
- 1/3 cup fat-free sour cream
- 1 tbsp butter
- 1 tsp salt
- 1/4 tsp black pepper
Method
- Place potatoes and garlic in a soup pot and add enough water to cover. Bring to a boil over high heat. Reduce heat to medium and cook 20 to 25 minutes, or until potatoes are tender; drain and place in a large bowl.
- Mash potatoes and garlic along with remaining ingredients, until smooth and well blended. Serve immediately with roti/ toasted bread/ rice. and pickles.
