Ingredients
225 gm whole green chilies, rinsed, patted dry, and seeds removed, divided
1 1/2 cups low-fat grated Mexican/ Cheddar cheese, divided
3/4 cup liquid egg substitute
1/2 cup fat-free milk
1 tsp onion powder or finely chopped onion 2 tbsp
1/2 tsp salt
Method
Preheat oven to 350 degrees F. Coat a baking dish with cooking spray.
Spread half the chillies on bottom of prepared baking dish.
Sprinkle 3/4 cup cheese on top then add layer of remaining chillies.
In a small bowl, whisk egg substitute, milk, onion powder/ onion and salt; pour over chillies.
Sprinkle with remaining cheese.
Bake 30 minutes, or until golden.
