raw mango 500 gm
sugar 1000 gm
salt 2 tsp
chilli pdr. 2 tsp ( optional)
raisins 3-4 tbsp ( optional)
nuts chopped 3-4 tbsp ( optional)
citric acid 1/2 tsp
mix raw mango salt, sugar and keep till sugar dissolves
heat a heavy pan, add raw mango with sugar dissolved
keep stirring from time to time, till it thickens, add citric acid
those who prefer, sweet and chilli taste, can add chilli pdr.
nuts and raisins, cook till the syrup is of 2 string consistency, to test, put a drop of syrup on a plate, once slightly cool, touch with thumb and index finger, if you can see 2 threads when you stretch your finger, it is done
remove, cool completely, store in clean, sterilised jar
this goes well with roti, bread, dosai, adai, bhajias, pakoras.
so enjoy this delight, when using make sure your hands and spoon are dry
I love this with little chilli pdr too, as it is a delight to eat with roti, toasted bread, adai, dosai.
