Panna Cotta

Ingredients

fresh cream  1 kg
sugar  200 gm
lemon grass chopped  75 gm
gelatine  25 gm
iced water  75 ml
fruits for garnishing

Method

soak the gelatine in ice water
boil fresh cream, sugar with chopped lemon grass
melt the gelatine in a double boiler in the microwave for 20 seconds
add to the boiled cream, mix well
strain the cream, cool it in ice bath
pour into a bowl, set in the fridge below 5 deg. for 4-5 hours
serve chilled with chopped fruits
