No-cook coconut pudding

Ingredients

2 cups skimmed milk
1 packet instant sugar-free vanilla pudding mix
1/4 tsp  vanilla essence
2 tbsp shredded coconut, toasted
Method  
In a blender, combine milk, pudding mix, and coconut extract for about 1 minute or until slightly thickened. 
Divide among 4 dessert bowls   and sprinkle with coconut. 
Refrigerate 30 minutes or until set.
