This lunch in a mug is the perfect opportunity to make use of leftovers from taco night with this Mexican-themed meal.
Ingredients
Egg - 1
Milk - 1 tbsp.
Salt - to taste
Ground black pepper - to taste
Cheddar cheese - 1 tbsp.
Tortilla chips - 5
Salsa - 1 tbsp.
Sour cream - a dollop
*Queso fresco - a pinch
Green onions - a pinch (chopped)
*Good substitutes for queso fresco include Paneer, Feta (especially mild or rinsed), Ricotta Salata, or Farmer's Cheese for their similar crumbling, non-melting texture.
Preparations
In a coffee cup, beat an egg and milk with a fork.
Sprinkle with salt and pepper for taste.
Add in the cheddar and stir to coat.
Break 4 tortilla chips into small pieces and stir into the mix. Add the salsa.
Microwave for 1 minute and 10 seconds.
Garnish with a tortilla chip, sour cream, queso fresco, and chopped green onion
