Ingredients
Unsalted butter - 2 tbsp. (divided)
Brown sugar - 3 tbsp. (divided)
Egg - 1/2 OR half a banana
Sour cream - 2 tbsp.
Maple syrup / Honey- 1 tsp.
Vanilla Extract - a drop
Self-Rising flour - 1/4 cup
Cinnamon pdr- 1/4 tsp.
Apricot preserve - 1 tsp. (or other preserves)
All-Purpose flour - 2 tbsp.
Salt - a pinch
Preparations
Mix 1 tbsp butter with 1 tbsp brown
sugar in a large measuring cup until creamy.
Add the egg, sour cream, syrup, and vanilla. Beat until blended.
Add the self-rising flour and 1/4 teaspoon cinnamon.
Pour half the batter in a 12 oz cup. Add the apricots in the center
then pour the remaining batter over this.
Now make the topping.
In a small bowl combine the all-purpose flour,
remaining sugar, butter, and cinnamon.
Knead until crumbly in texture
and sprinkle on top of the batter in the mug.
Microwave on high for a minute and 15 seconds.
