This soup is a perfect heat-punch for cold
days. The fresh ginger not only gives it a flavorful kick - it provides
the soup with healthy goodness too. This soup is a great base as well
for your kitchen experiments as it will welcome any root vegetable you
choose to add in.
Ingredients :
Water - 3 cups
Sweet potato - 2 cups (peeled and diced)
Ginger - 1/4 cup (cut into julienne)
Salt and Pepper - as needed
Nutmeg - 1/4 tsp. (or more)
Preparations
In a large saucepan, bring a pot of water to a boil. Add all the
ingredients, cover, reduce the heat and simmer for 30 minutes.
Place half of the sweet potato mixture in a blender and process
until smooth.
Return the pureed mixture to the pot. Now is your time to
add seasonings, and cook over medium to high heat until thoroughly
cooked through.
Tip:
This soup is a great base for other root vegetables such as sunroots/ Jerusalem artichoke and
carrots. Zucchinis will also pair in well.
