Cottage cheese and veges bake

   

 Ingredients

 Cottage Cheese Mixture

1 1/2 cups cottage cheese

2 eggs

1/2 tsp salt

1/4 tsp black pepper

Vegetables

1 zucchini diced

1 red bell pepper chopped

1 cup broccoli florets chopped

1 carrot small, grated

1medium red onion finely chopped

2 cloves garlic minced

1/2 tsp dried oregano optional

1/4 cup Parmesan or cheddar cheese grated, optional, for topping

1 Cooking spray or olive oil for greasing the baking dish

Instructions 

Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish with cooking spray or olive oil.

In a large bowl, combine cottage cheese, eggs, salt, and pepper.

Add the diced zucchini, chopped red bell pepper, chopped broccoli florets, grated carrot, finely chopped red onion, and minced garlic to the bowl.

Stir in the dried oregano, if using.

Pour the mixture into the prepared baking dish.

If desired, sprinkle the top with grated Parmesan or cheddar cheese.

Bake for 30-35 minutes, or until the bake is set and lightly golden brown.

Let cool slightly before serving.

Notes

This recipe can be easily adapted to include other vegetables you enjoy. Feel free to experiment with different herbs and spices as well.
