Date Rolls- No cook, healthy dessert

 

Date rolls covered in coconut on a metal plate.  

Ingredients

 400 gMedjool dates (usually 20 dates) pitted

 100 gwhole almonds

 ¼ cup desiccated coconut 

Preparations Add almonds to the bowl of a food processor, and process until chopped. Add in dates and continue to process (scraping down the sides as needed) until dates are chopped and the mixture comes together. Shape the date mixture into 16 small logs. Place coconut in a shallow bowl and individually roll each log in coconut to coat.

Notes

Roll the mixture into balls (truffles) instead of rolls.

Replace the coconut with crushed nuts.

In case you some other dates, deseed them, soak them in just enough warm water till soft. Pat dry lightly, then add to the powdered almonds.
 
In case, you find it difficult to roll them, grease  your palms with ghee/ melted butter, as using water, you'll have to keep them in the fridge.
 
Using other dates soaked in warm water should be kept in fridge, as moisture will spoil them quickly.
