Microwave Cheese and Herbs Muffins

 Microwave Cheese and Herb Muffins 

 Ingredients

 Basil leaves - a handful (or 1 tbsp dried) 

Chives - a handful (or 1 tbsp dried) 

Thyme - 1/2 tsp 

Self-Rising flour - 9 oz. / 255 gm

Baking soda - 1 tsp. 

Eggs - 2 

Vegetable oil - 3 fl oz. / 105 ml

Milk - 3.5 fl oz. / 105 ml

Yogurt - 3.5 fl oz. / 105 ml

Parmesan cheese - 3.5 oz. (grated)  100 gm

 

Preparations

Mix the flour and baking soda together, then add the grated cheese and chopped herbs. 
 
In a separate bowl beat the eggs and add the oil. 
 
Add the milk and yogurt to the egg mixture. 
 
Add the wet ingredients to the dry ingredients, and combine well. 
 
Pour the mixture into 3 mugs, filling a third of each mug. 
 
Cook in the microwave for 4 minutes on high, or until raised and firm to touch. 
 
The remaining mixture can be used to make another 3 mugs of muffins.
