Ingredients
1 ½ cups all-purpose flour
1 ½ tsp baking pdr
½ tsp baking soda
½ tsp salt
1 tsp ginger pdr
1 tbsp fresh ginger, grated
½ cup unsalted butter, softened
¾ cup honey
¾ cup granulated sugar
3 large eggs
1 cup orange juice (freshly squeezed)
Zest of 1 orange
Preparations
Preheat oven to 350°F (175°C) and grease your cake pans.
In a large bowl, whisk together flour, baking powder, baking soda, salt, ginger pdr and grated fresh ginger.
In a separate bowl, beat softened butter with honey and sugar until light and fluffy.
Add eggs one at a time, beating after each addition. Stir in orange juice and orange zest.
Gradually fold the dry ingredients into the wet mixture until just combined.
Pour batter into prepared pans and smooth the tops.
Bake for 25-30 minutes or until a toothpick inserted comes out clean.
Cool in pans for 10 minutes, then transfer to a wire rack to cool completely before serving.
