Ingredients
1 vegan pie crust
2 cups coconut milk
¼ cup cornstarch
½ cup maple syrup
1 teaspoon vanilla
2 bananas (sliced)
Coconut whipped cream
How to make
Heat coconut milk, maple syrup, and cornstarch, stirring until thick
Stir in vanilla and let it cool
Layer bananas in the crust and pour the filling
Chill for 3 hours and top with coconut whipped cream
