Low-Sugar Spiced Coconut Sweet Bread - Egg-less, healthy

Ingredients:  
 3 cups whole wheat flour  

1/4 cup brown sugar  

1 tsp baking powder  

1/2 tsp cinnamon  

1/2 tsp nutmeg  

1/4 tsp cloves (optional)  

1/2 tsp salt  

1/4 cup melted butter  

1 cup unsweetened coconut flakes  

2 tbsp chopped walnuts or pecans (optional)  

1 tsp vanilla extract  

1 cup oat milk  

1 flax egg (1 tbsp flaxseed + 3 tbsp water)  



Instructions:  

1. Preheat oven to 350°F. Grease pan.  
2. Combine dry ingredients in a large bowl.  
3. Stir in melted butter until crumbly.  
4. Add coconut, nuts, oat milk, vanilla, and flax egg. Mix gently.  
5. Pour batter into the pan and bake for 50-55 minutes.  
6. Let cool completely before serving.
