Ingredients
Eggs 2
Bell pepper diced ½
Fresh Spinach chopped ¼ cup
Salt to taste
Pepper pdr to taste
Cheese/ ham (optional)
Method
Grease a mug with oil, then crack eggs into the mug, add ham, be;; pepper, spinach, salt and pepper. Beat with a fork to mix. Cook for 2-3 minutes. If you see the mix bubbling out of the cup, stop the microwave, remove the cup out and mix once, place it back into the microwave and cook. Insert a fork into the cup and if it comes out clean, the omelette is cooked and ready. If the fork comes out eggy, you need to cook the egg for a minute or two more. Mix it once and place it back into the microwave. Cook until the fork comes out clean.
Note- if the mug is not very large, use 1 egg only to see how much it comes.
