At times, rice and dal ( cooked lentils) are left over. With inflation, high costs of lentils, rice, one shouldn't waste food. Not the family may like to eat left-over dal. There are ways to use left-overs, some dal, sambar, rasam and veges, can be turned into a delicious mixed vege rice ! I've made it often, it used to get over so fast, at times, I may / may not even gt to taste it !
Now, this is another way of using left-over dal and rice. I've used left over rice along in a similar way , frying with cheese in between adding onion and green chilies. After 2 days or so, when daughter switched on a cooky show, she saw the same recipe made by the chef, she said " amma, your recipe is already copied !".
Ingredients for outer cover
left-over dal 1/2 -1 cup
coriander leaves 2 tbsp
rice 1 cup or whatever is there
green chilies finely chopped to taste
garlic 1 tsp finely chopped optional
ginger 1 tsp finely chopped
salt to taste ( be careful as there's salt in dal)
slurry
maida 1/2 cup
cornflour 1/3 cup
salt and pepper pdr to taste
breadcrumbs
oil to fry
ghee 1 tbsp
for stuffing
grated mozzarella cheese 1/2 cup or as needed
onion 1 small finely chopped
chili flakes or green chilies finely chopped to taste
salt little
dried Italian seasoning 1 tsp
Method
in a pan, heat ghee, add little hing,add garlic, ginger, green chilies, fry for a minute
add dal, keep stirring till dal thickens, add coriander leaves, rice and little salt mix well
remove to cool and mash it well, make small balls or you can flatten like tikki if you don't want to use too much oil to fry.
mix all the ingredients of stuffing, put 1/2-1 tsp of stuffing inside each rice-dal ball, roll well or flatten well to cover the stuffing
dip well to coat in slurry, roll in breadcrumbs.
keep it in the freezer for 15 minutes
fry in hot oil till brown on all sides.
drain well, serve hot with mint/ coriander chutney or sauce.
