In the olden days, when there were no refrigerators, leftover rice was covered with water at night . Next morning, rice was nicely mashed with hands, salt and buttermilk were added, people used to drink it for morning breakfast and go to work ! It is very healthy, cooling and above all being a probiotic, it is good for your digestion. To make it more palatable, you can season it like in the recipe below and drink a wholesome kanji to give you enough strength till your lunch !

Take bowl, add cooked rice. Add water, and mix well. Cover a lid. Keep aside for overnight.

Add curd, whisk well. Add chopped onion. Take a small pan, add oil, add, urad dal, mustard seeds, and jeera. Saute it.

Add hing, green chili, crushed ginger, and curry leaves. Pour seasoning on rice kanji. Mix well. Now add salt.

Mix well. Garnish with coriander, onion slices, and red chili flakes.
