Bananas with freckly brown spots are good
for you, so avoid discarding them. Bananas are capable of being so much
more than a grab-and-go snack. So, get creative, mash them up, and turn
them into these delicious banana bread pancakes!
Ingredients
Buttermilk pancake mix - 2 cups
Pumpkin pie spice - 2 tsp.
Baking powder - 2 tsp.
Rolled oats - 1/2 cup
Pecans - 1/2 cup (chopped)
Large eggs - 2
Buttermilk - 2 cups
Vanilla extract - 1 tsp.
Medium overripe bananas - 3 (mashed)
Blueberries - to taste (to garnish)
Maple syrup - to taste (to garnish)
Method
Whisk the pancake mix, pumpkin spice, and baking powder in a
medium-sized bowl. Stir in the oats.
In another bowl, whisk the eggs and then stir in the buttermilk,
vanilla, and mashed bananas, mixing well.
Add the wet ingredients to the dry ones and stir to combine. If the
batter is too thick, add some more buttermilk.
Let the mixture sit for
10 minutes or so while the griddle or frying pan heats up.
Spray the griddle with cooking spray over medium heat.
When it’s
hot. Pour or scoop the pancake mix onto the griddle (about ¼ cup per
pancake).
Cook until the bottoms are lightly browned and the top starts
to bubble, then flip and repeat.
Serve with maple syrup, blueberries, or sliced banana.
