Ingredients and Prep
ragi flour 1 cup
ghee 1/2 cup
heat ghee, fry ragi flour in it on low flame for 7-8 minutes till ghee separates
add 1 tbsp chopped nuts, fry for another 30 seconds
in the mean time heat
milk 2 cups
slowly add the hot milk, mixing ragi well, making sure no lumps are there, keep mixing well
keep cooking, stirring continuously for 15 -20 minutes, till it gets thick and leaves the sides of the pan/ kadai.
add sugar 3/4 cup and keep cooking till it all comes together
it will take about 5 minutes for it to cook and leave the sides of the pan.
add cardamom pdr 1/2 tsp mix well, switch off the flame.
serve garnish with some chopped nuts.
Note- Instead of adding milk, you may add 2 cups of water in which 3/4 cup of jaggery is dissolved, strain the liquid while you add to the fried ragi flour. By adding jaggery, you're making it healthier, as jaggery contains iron.
