Ingredients and Prep
Boiled big potatoes, peeled 3 grate well
Suji ½ cup fine or grind in a mixer to make a fine pdr
Add 1 cup water to mix suji well, rest for 10 minutes covered
Grate cucumber in bigger grater ½ big cucumber
Curd thick ½ cup whisk well
Salt, chili pdr,chaat masala, jeera pdr as per taste
Onion chopped fine 1 tbsp, dhania chopped 1-2 tsp cucumber mix all well with curd
Add mint chopped to raita
Add grated potatoes to suji add 1 tsp chili pdr, salt to taste jeera 1 tsp haldi ½ tsp chaat masala 1 tsp, green chilies finely chopped to taste
Coriander leave, spring onion greens finely chopped 2-3 tsp mix all well
Add 1 cup atta, add little at a time, you’ve to knead to a dough without adding water
Add atta as necessary, grease your hand and knead well, rest for 5-10 minutes
Make small / big rounds, grease rolling pin and rolling board, roll into slightly thick roti, cut into small rounds with a cutter. Don’t use atta to roll roti. OR you can roll into round puris without taking the trouble to make big roti and cutting it.
Fry in hot oil your puris in medium hot oil, your puris will be puffed up nicely
To make them puffed up keep putting hot oil over it. Serve hot with raita and pickle of your choice.
