Ingredients
avocados chopped 2
spring onion 1 chopped
lime juice 1 tbsp
sour cream 1/2 cup
seasonings 2 tsp
coriander leaves chopped 1 tbsp
tomato salsa 1/2 cup
tomatoes de-seed 2 diced
cucumber 1 diced
cheese grated 1/2 cup
corn chips to serve
Preparations
In a separate bowl, combine sour cream, taco seasoning and coriander.
Spoon avocado into the base of 8 x 1/2-cup-capacity clear serving cups. Top each evenly with salsa. Spoon the sour cream mixture over the salsa.
Top with tomato, cucumber and cheese. Serve with corn chips.
Note- I you don't have such cups, no problem, Roast a papad, when warm, you can fold it like a taco shell. OR use small size rotis baked like taco in an oven. ! We've to be innovative.
