Ingredients
all purpose flour 4 cups
granulated sugar 1/2 cup
active dry yeast 2 1/4 tsp
warm milk 1 cup
unsalted butter melted 1/4 cup
cardamom pdr 1 tsp
zest of 1 orange
eggs 2 large
brown sugar 1/2 cup
cinnamon pdr 1 tsp
pdr sugar 1 cup
orange juice 1 tbsp
Preparations
In a bowl, combine warm milk and sugar. Sprinkle yeast on top; let sit for 5 minutes until frothy.
In a large bowl, mix flour, cardamom, orange zest,
salt, melted butter, and eggs. Add yeast mixture; stir to form a soft
dough.
Turn onto a floured
surface and knead for about 8 minutes until smooth. Place in a greased
bowl; cover and let rise in a warm place until doubled (about 1 hour)
Mix brown sugar and cinnamon; set aside.
Punch down the dough and roll into a rectangle (½ inch
thick). Spread softened butter over it and sprinkle with the
sugar-cinnamon mixture.
Roll tightly into a log, slice into pieces, and place cut-side up
in a greased dish. Let rise again (30 minutes), then bake at 375°F for
about 25 minutes until golden brown. Drizzle with glaze when slightly
cooled.
