Potatoes and Mushrooms Baked Pancake

 Ingredients and Prep

2 eggs beat well add

80 ml milk whisk well add

100 gm flour, whisk well

Grate 2 large peeled potatoes, put in cold water, wash well, drain well add to the egg mixture along with salt

Chop 1 onion, add to a heated  pan  with a tbsp of oil  and fry for 2 minutes

Crush 3 garlic cloves and finely chop, add to the onion, fry

Chop 2-3 green chilies, as per taste after removing the seeds add to the onion, mix and fry

Add salt, chili pdr and pepper pdr to taste, mix well, add to the egg mixture, mix well

Add 6-7 mushrooms chopped, add dill finely chopped add to the egg mixture, mix all well

Grease a big dish with oil, pour the egg mixture , level the top,bake in preheated oven @ 360 F/ 180 C for 15 minutes

Heat a pan with a tbsp of butter, chop 1 onion add to the pan, mix well, fry on medium flame

Chop 155 gm of button mushrooms, add to the onion, mix well, fry, add salt, 1 tsp garlic pdr, 1 tbsp flour, mix well fry for 2 minutes add cream 1 cup / 240 ml, mix well, cook till thick, pour over the baked mixture, spread well

Cut 3 spring onions fine spread the spring onion on top of mushrooms, grate 100 gm cheese

Sprinkle the cheese on top of the mushroom evenly, bake till golden brown @ 180 C.

Cut and serve hot with tomato sauce / chili sauce. 

NOTE- you may use any other vegetable of your choice.
