Ingredients
limes 6
green chilies 15 =20 depending on its sharpness
turmeric pdr 1/4 tsp
salt to taste
hing little
mustard seeds 1 tsp
fenugreek seeds 1/2 tsp
oil 2 tbsp
mustard seeds 1/2 tsp
gur 1 tsp
Method
in a steamer/ cooker, wash the limes and green chilies, keep in an idli plate to steam for about 10 minutes till limes are soft.
roast fenugreek seeds , cool and powder it with mustard seeds and keep it aside.
once cool, put the limes with skin and green chilies in the mixer jar and grind them without adding any water.
In a kadai, heat oil, add mustard seeds, once it crackles, add hing, then add the ground paste and the dry powder along with turmeric pdr, salt to taste and keep stirring till it all comes together, now add gur, mix well for a minute, remove.
To store, put some oil or vinegar in the bottle/ jar, shake it well so the bottle/ jar and the lid gets coated with oil/ vinegar.
Then when you pour your pickle, it will not get bad, provided you use dry hands and spoon to handle your pickles.
After transferring the pickle/ thoku to the jar/ bottle, add some rice in the kadai, mix well, you get to eat some nice thoku rice !
You can eat thoku with idli, dosa, roti, bread toast, or just simply mix with hot rice adding some ghee to have a yummy treat.
