  Sattu Ki Khasta Kachori With Green Chutney  

INGREDIENTS

  • 1 cupSaatu
  • 1 cupWheat flour
  • 1 cupRefined flour
  • As requireddesi ghee 
  •  2Onions finely chopped
  • 10Green chilies or as per taste
  • As requiredgreen coriander leaves chopped
  • 4 tspLemon juice
  • As requiredSalt
  • 1 tspAjwain
  • 4Tomatoes chopped fine
  • 1garlic pod chopped
  • 1 tbspGinger chopped
  • 1/2 tspTurmeric
  • 1/2 tspchili powder
  • 1/4 tspBlack salt
  • As requiredmustard oil

 Take a deep vessel, put both flour in it and mix it. Add salt,ajwain and mix it. Add ghee in this and mix as if forming a dough. When the ingredients begin to bind together then start adding water slowly to the flour mixture to prepare a medium soft dough for kachori .

In another smaller pan/ bowl, add chopped onion, ginger, green chilies, garlic, coriander leaves, turmeric , chili powders, ajwain, tomatoes, lime juice, salt, mix well, such that you're able to make a small ball from this for stuffing. If  you can't, don't worry, stuff with your hands or spoon inside each ball of sattu dough prepared. 

Once you stuff it well, bring the corners all together, to close it, then press it with your hands or you may use a rolling pan to roll out lightly, making sure the stuffing doesn't come out.

Fry in medium hot oil, till crisp on both sides, drain well on kitchen towels, serve hot with chutney of your choice.

Sattu is a flour made from roasted pulses and cereals, and is high in protein and fiber. It's a staple ingredient in many Indian kitchens and is also popular in Nepal, Tibet, and  India.
