Ingredients
- 1 cup Sona Masoori Rice or Small grain rice
- 1/2 cup Moong dal
- 1.5-2 cup Mixed Veggies, like beans, carrot, peas ,cauliflower ,knol khol etc
- 1 medium size Onion, chopped
- 1-2 medium size Tomato, chopped
- 3-4 Green chilies slit
- 1 tsp Ginger Garlic Paste
- 1/2 tsp Turmeric pdr
- 1/2 tsp Red chili pdr
- 1/2 tsp Garam masala pdr
- 1 tsp Ghee
- Salt to taste
To Temper
- 3-4 tsp Oil
- 1 tsp Ghee
- 1 Bay leaf / Tejpatta
- 1 piece Cinnamon
- 3-4 nos 3-4 cloves
- 1-2 cardamom
- 1 tsp Cumin seeds /Jeera
- Pinch Hing / Asafoetida
Instructions
Wash well Rice and Moong Dal . Drain them . Wash and chop vegetables of your choice like Beans, Carrot, Peas , Gobhi, Knol Khol , Potatoes etc . Now after this, heat Oil and ghee in a pressure cooker. When the ghee is hot, add bay leaf ,Cinnamon ,Cloves , Elaichi ,Jeera and pinch of Hing. Sauté for a few seconds . Next add chopped Onion ,Ginger Garlic Paste and slit Green Chili. Saute 1-2 mins till onions are translucent .Add chopped Tomato, fry till tomatoes are soft and mushy. Next Add Chopped Mixed Veggies, tsp salt, turmeric, Red Chili powder. Fry for 1 minute. Add drained Rice and Moong mix. Fry for 1-2 mins. Add 5-6 cup water ( 1:4 proportion) Salt, Garam masala powder and tsp ghee. Mix. Pressure cook for 2-3 whistle on medium heat. Allow the pressure to release. Khichdi should be cooked soft and mushy . Stir well , If khichdi is little thick, add little hot water and mix. The consistency of khichdi is best when its like that of a porridge . So accordingly adjust water quantity. Enjoy hot Masala Khichdi with a drizzle of ghee, papad and pickle.
