Parwal and Potato Sabzi

Ingredients
parwal as needed
potatoes as needed
salt and chilli pdr. to taste
 coriander pdr.  2 tsp
amchur pdr.  1 tsp
turmeric pdr.  1/2 tsp
asafoetida  1/4 tsp
cumin  1 tsp
oil as needed

Method
Peel and cut the edges the of the parwal, then cut them into thin long strips, remove the thick seeds, if tender, you need not remove them
wash and cut potatoes in thin strips like parwal, put them in water
heat a kadai/ wok, heat oil as needed, add cumin 1 tsp, once it crackles, add hing 1/4 tsp, turmeric pdr.  1/2 tsp, and the vegetables, by draining out the water from the potatoes
add salt, chilli pdr, to taste and coriander pdr.  1 tsp, mix well
cover and cook on low flame till both parwal and potatoes are cooked, stir in between
it may take 12-15 minutes to cook
once done, add another tsp. of coriander pdr. and dry mango pdr., fry for another 3 minutes
serve hot with roti/ bread/ rice
