Ingredients
idli batter 1 cup
mango chopped fine 1/2 cup
green and red chillies finely chopped 1 tsp
ginger finely chopped 1 tsp
coriander leaves finely chopped 1 tbsp
salt little
pepper pdr. 1/2 tsp
cheese grated 1 tbsp / 1 cube
oil to cook
Method
in a bowl, mix idli batter with rest of the ingredients including last 1 tbsp oil well
heat a paniyaram or appakarai, preferably non-stick
put 1 drop of oil in each mould, put 1 serving spoon of batter in each
cover and cook for 5 minutes on low flame
once the bottom is brown, turn over, again put little oil in each, cover and cook for another 5 minutes
once both sides are brown, remove, cool slightly
to serve, place on each appam, a piece of mango and coriander leaf with a toothpick
For Mango Sauce
mango pulp 1/4 cup
tomato ketchup 2 tbsp
sugar 1 tsp
salt little
vinegar 1 tsp
chilli pdr. 1/2 tsp
jeera/ cumin 1/2 tsp
bring all together in a boil, once it boils, remove, serve in a bowl along with appams
