Florentine

Ingredients

butter  500 gm
castor sugar   50 gm
wholemeal flour   25 gm
cherries   40 gm chopped finely
ginger  25 gm chopped finely
almonds flaked   25 gm
mixed peels  35 gm chopped
plain chocolate   125 gm  melted

method

line a large baking tray and keep aside
place butter and sugar in a bowl over a saucepan of gently simmering water
stir till butter melts, remove from heat and add flour
mix until smooth and stir in cherries, ginger, almonds, peels and flaked almonds
place spoonfuls of the mixture well apart on the baking dish
bake in a pre-heated oven at 180 deg. C/ 350 deg. F  for 8-10 minutes till golden
allow to cool for 10 minutes, then using a palette knife, carefully transfer to a wire rack to cool
spread melted chocolate over one side of each florentine and mark lines with a fork if desired
leave to harden
makes 10-12 cookies
