Ingredients
oil 1tsp for making stuffing + for paranthas
onion 1 medium chopped fine
parwal peeled and chopped fine 100 gm
salt to taste
chilli pdr. to taste
coriander pdr. 2 tsp
cumin pdr. 1 tsp
chana masala 1 tsp
turmeric pdr. 1/4 tsp
paneer/ cheese grated 1/4 cup ( optional)
coriander leaves chopped 1 tbsp
Method
in a pan/ kadai heat oil, add chopped onion fry till pink
add parwal chopped along with some water to cook it
once the water is almost evaporated, and parwal is almost cooked
add the spices, mix well, cook till dry
remove, add cheese or paneer and coriander leaves, mix well
in the mean time, make dough with whole wheat flour, wee bit salt, water and oil 1 tsp last to make a soft dough
take small amount of the dough, roll out to thin, big rounds, put the filling in the centre in a a square shape, then cut around 4 corner, i.e., in case you want to shape the packet as a square, then where you need to fold, in those places, you'll need to cut small tri-angles, which you can use with the rest of the dough to roll out again.
to fold into square, fold from top and bottom, then the 2 sides, press lightly, roll out lightly
make all paranthas in the same way, in case you find it difficult to make squares, then bring the dough together from all sides, and roll out lightly into circle, OR
you can spread filling in a roti full, then cover with another roti of the same size, make sure to seal all around well
then heat a tawa well, cook roti on both sides till brown and crisp using little oil
serve hot with plain curd or with a raita
as this will make a complete meal by itself, if you use a vegetable raita like tomato/ cucumber / mix both / potato
ps- parwal is supposed to be rich in iron ,Vitamins and minerals.
