Litchi Jelly

Ingredients

litchis  12   de-sseeded
gelatin   6 1/2 tsp
citric acid   1 1/4 tsp
sugar  4 1/4  tbsp
litchi squash   1/2 cup
water  2 1/2 cups
fresh cream  100 gm
litchi/ vanilla essence  1/2 tsp

Method

cut 6 litchis into small pieces, save the rest for garnishing
take gelatin, citric acid and sugar in a vessel
add squahs and water
mix well and keep aside for 5 minutes
heat and melt gelatin and sugar
remove from heat and cool
mix litchi pieces, essence and fresh cream
put in the fridge to semi-set
stir once and pour into a rinsed mould
set in fridge for at least 5 hours
unmould on a serving plate by dipping the outside of the mould in hot water
serve with litchis
