FENUGREEK LEAVES WITH POTATOES

INGREDIENTS

potatoes boiled   200 gm
fenugreek leaves   40 gm
onion chopped fine   1
cumin  1 tsp
garlic chopped fine  2 tsp ( optional)
ginger chopped fine  1 tsp
green chillies chopped fine  1 tsp
coriander pdr.  50 gm
turmeric pdr   1 tsp
asafoetida  1/4 tsp
oil  2 tbsp
salt to taste

METHOD

wash the leaves, squeeze out the water, chop them fine.
sprinkle some salt & keep aside for roughly 30 minutes.
heat oil in a pan, add cumin, when they crackle, add garlic, ginger, chillies, onion little salt, fry till onion turns light brown.
add the potatoes fry for another 3-4 minutes
add  coriander pdr., turmeric pdr., asafoetida, cook for 3-4 minutes
add the chopped leaves, cook for 2-3 minutes on low flame.
serve hot with rice/ roti/ breads.
