STUFFED BITTER GOURD/ KARELA

INGREDIENTS

bitter gourd as needed, scrape the ridges, slit in the centre without breaking, remove the seeds
peanuts 1/4 cup
red chillies  5-6
hing 1/4 tsp
coconut  1/4 cup
tamarind pulp little
sesame seeds   2 tbsp
poppy seeds  2 tbsp
oil for frying
salt to taste
onion finely chopped   1/4 cup

METHOD
parboil the slit bitter gourd with little salt, turmeric pdr., tamarind little, drain well and keep aside
grind the peanuts, red chillies, hing, coconut, tamarind, sesame seeds, poppy seeds to a fine thick paste adding minimum water
heat roughly 1 tablespoon of oil, fry  onion till transparent
then add the ground masala fry well till dry, cool
fill the stuffing well in the slit parboiled, drained bitter gourd well
heat 1 tbsp oil in a pan, shallow fry the stuffed bitter gourd, till light brown on all sides, if any masala is left over, add that also and fry
serve hot with rice/ roti/ bread
