CORN MINI IDLIS

INGREDIENTS

ghee  1 tbsp
semolina   1/4 cup
grated corn   1/4 cup
paneer crumbs   1/2 cup
green chillies finely chopped   2
soda-bi-carb   1/4 tsp
coriander leaves finely chopped   2 tbsp
curd   1/4 cup
salt to taste

for tempering
oil   2 tbsp
mustard seeds   1 tsp
 coriander leaves finely chopped for garnishing

METHOD

roast semolina in melted ghee for few minutes, cool
add corn to semolina, paneer, chillies, salt, coriander leaves, curds
mix well, keep aside for 10 minutes
if too thick, add little water to get the right consistency
put in greased idli moulds, incase, people don't have idli moulds, no problem, just grease a plate which can fit into a steamer/ cooker, as idlis can be round/ square/ rectangle !
steam for 10-12 minutes, remove
just before serving, heat oil, add mustard seeds, when it stops crackling, add idlis, mix well, serve warm, garnish with chopped coriander leaves, serve with some chutney
